I may be an imaginative cook but with a baby and two young children making demands on my time there have been more than a few evenings when the best I have managed is eggs on toast. It gets to supper time and I stand in front of the fridge with no idea what I’m going to make. Please tell me I’m not the only one… For the last few weeks I have been cooking my way through the My Daddy Cooks book written by Nick Coffer and eggs on toast are off the menu.
Nick started out posting videos of himself cooking with his son Archie as a hobby. His hobby soon turned into a new career and he started work on this, his first cook book. The book contains 100 recipes from breakfast to lighter bites to puddings and everything in between: it is a family necessity.
Nick’s style of cooking is great food without the faff – if there’s a way to make it easy he has found it. You won’t find yourself scratching your head when it comes to ingredients and with a well stocked cupboard you can make simple delicious meals with very little effort.
When I first flicked through the book there were so many recipes jumping off the page I sat down and planned our week’s meals around them. We had Chicken Pie with Rosti Topping, Past Bake with Italian Sausage, Bready Scrolls, Savoury Muffins and Savoury Brittany Pancakes each of which provide a satisfying meal any time of the week. I made Flourless Muddy Chocolate Cake and No Bake Tiffin for guests. We enjoyed lazy weekend breakfasts of Savoury Breakfast Bread PuddingĂ‚Â and Oven Baked French Toast. And these are just a few of the recipes we sampled.
Nick is known for getting his son Archie involved in the cooking and the recipes in this books can be made with as little or as much help from children as you want. Having spent a month cooking from this book my excitement about cooking supper has returned. I may not know what I’m going to cook when I stand in front of the fridge but I have a wealth of inspiration at my finger tips.
